in the video about the differences between the two Blanc de Blancs of the house: On the one hand there is the Blanc de Blanc without vintage, which was recently launched, then of course the classic Blanc des Millenaires, this time in the 2006 vintage edition.
A powerhouse that does it at any time with a loin of wild boar created by Auguste Escoffier in his Le guide culinaire on a sauce à la Diane.
The Blanc des Millenaires is very well known: the legendary Daniel Thibault, Charly's cellar master between 1974 and 2002, brought it to life in 1983.
There are some stories about this in my first Champagne book.
